Are all the safeties we've named (GG&G, Vang Comp, S&J, and Scattergun/ Wilson Combat) metal?
Or are some of them plastic such as the ones from the factory?

Some aftermarket safety buttons are metal, some are plastic. I don't know which are which off the top of my head.
Are you sure your factory safety is plastic? The standard button on my Express is metal, possibly a MIM part. I know the older ISS safety buttons were made from an injection-molded iron-nickel alloy.

I could be wrong, but I think it is. Admittedly I've not had it out of the TPA. The factory safety has a J-shaped key (J-Key) to lock the gun on "safe" if I'm away from it.
I'm weighing the benefits/ drawbacks of an oversized safety vs. the loss of the J-Key/ lockout option.

If your safety is the J-lock type, I'm pretty sure it's metal, specifically an injection-molded iron-nickel material. Remington's Powdered Metal Products Division actually won a MIMA award for that part back in 2000.
However, a well-made part doesn't make a bad concept a good one. Even if they never lock up under recoil or switch off without a key, integrated gun locks are always a bad idea simply because they add unnecessary complexity, and are way too easy to forget about. Remington stopped equipping 870s with ISS systems shortly after they introduced them. I'd suggest changing any ISS safety button out for a non-locking one (either a standard button or a large-head aftermarket one, whichever you prefer), and spending $5-$10 on a real gun lock that'll do a better job.

I'm firmly in the factory flush safety camp. I have used the Wilson Combat/Scattergun large safety in the past and my finger cannot tell whether it is engaged. This is one part I prefer to leave alone.

I use Vang safety. I started using them because Vang gave them to me. I like them and have no desire to replace them.
