This is my 870 home defense gun. I have a 28" barrel and was able to find another and had it cut to 18 3/4" and rethreaded for remchokes. I am planning on trying a pistol grip and new forearm soon.
I also want to add a mag tube extension. I am wondering what would be the best length to be close to the end of the barrel but not go past at all.

Good looking rig you have, Tote412.

If you don't already have one, pick up a forend wrench as the kit I am sending you does not have one. Don't know if it had one originally, didn't have one when I got it. You can get a UTG Universal wrench from Amazon for about $16.00.

Most +2 magazine extensions are designed to line up with either 18" or 18.5" barrels, so those would probably be the way to go if you really don't want the tube to extend past the muzzle (though that won't really cause any problems).

I was looking at installing an S&J Bayonet Mounting Kit +3 on my 18.5." I'm not too concerned w/the mag protruding. It has a bead sight. You foresee any problems w/the barrel clamp?

As long as your barrel has a standard spacing and outer profile, the clamp should fit just fine. I don't have an S&J Hardware extension (though I'd love to evaluate one at some point), but I do have one of their bayonet mounts that I use with my factory extensions (which are also stepped-down on the end to accept bayonets), and it fits great with my standard-profile barrels.

The Remington +2 is designed to match up exactly with an 18.5" barrel, Since your barrel is 18 3/4 it would be fine. Most other +2 mag extensions are about 1/2" to 1' shorter than the Remington; that's only because the Remington +2 mag extension has the extra 1/2' on the end for use with a bayonet setup.
